Chicken Sopa...from Lea Anne aka Meadowbutt

A favorite to have alone as a meal or with your favorite other mexican
dish.....

Chicken Sopa

1 chicken..boiled and meat taken off and cut up into small pieces
1 can cream of chicken soup
1 small can green peppers....chopped
1 medium onion...diced
1 can evaporated milk
shredded chedder cheese
1 pkg. flour tortillas

In a medium bowl, mix soup,milk,peppers,and onion...mis till smooth
In a 9x9 pan,spread some of the soup mixture ,covering the bottom of the
pan...
Tear a tortilla into pieces and cover the bottom of the pan.....Spread
more soup mixture, to cover the tortilla.....Sprinkle cut up chicken
over the mixture...Sprinkle some chedder cheese over the top of
this.......Repeat steps until pan is full..Layering like a lasanga.....
Bake in oven @ 350 for 1 hour or microwave on high for 20 minutes....

Picnic Pasta Salad ...from Susie aka Lglsupplus

1 pound pasta
1 cup chopped mushrooms
1 cup chopped cucumbers
1 cup chopped broccoli
1 cup white sugar
3/4 cup vegetable oil
1/4 cup prepared mustard
2 tablespoons mayonnaise
1/4 cup distilled white vinegar
1/4 cup shredded Cheddar cheese
salt to taste
ground black pepper to taste

Directions:
Cook pasta in large pot of boiling salted water until al dente.  Rinse with
cool water.  Drain well.
Meanwhile, combine chopped vegatables, sugar, oil, mustard, mayonnaise,
vinegar, and shredded cheddar cheese in a large bowl.  Season with salt and
pepper to taste.  Mix well.  Stir in pasta.  Refrigerate 2 to 4 hours before
serving.

English Toffee

1/2 lb. oleo or butter
1 1/4 cup sugar
1/2 tablespoon sugar
4 eggs
1/2 cup dry milk
2 oz. chocolate

Beat butter and sugar for 5 minutes or until creamed and fluffy.  Add
vanilla and chocolate.  When melted and cooled, add 2 whole eggs, beat 3
minutes at medium speed.  Add 2 more eggs and 1/2 cup dry milk (add dry)
beat 2 more minutes.  Please in graham cracker lined pan (approx. 8 x 11). 
Sprinkle crumb mixture over top.  Chill 24 hours.  Servings should be small
as it is very rich.

Crumb Mixture for Toffee
3 cups graham cracker crumbs
1/2 cup powered sugar
1/2 cup melted oleo
Mix throughly, using two parts for bottom and one part for topping.

Pineapple-Glazed Apple Pie ...from alwaysbtrue2me aka Pat
1 1/2 cups unsweetened pineapple juice
3/4 cup sugar
7 tart medium apples, peeled, cored and cut in wedges (7 cups)
3 tablespoons cornstarch
1 tablespoon butter or margarine
1/2 teaspoon vanilla
1/2 teaspoon salt
1 baked 9-inch single pie shell, cooled

In a large saucepan combine 1 1/4 cups of the pineapple juice and the
sugar. Bring to boiling; add apple wedges. Simmer, covered 3 to 4
minutes or till apples are tender but not soft. With slotted spoon, lift
apples from pineapple liquid; set apples aside to drain.
Blend the remaining 1/4 cup pineapple juice slowly into cornstarch;
add to hot pineapple liquid in saucepan. Cook and stir till mixture
thickens and bubbles; cook 1 minute more. Remove from heat; Stir in the
butter or margarine, vanilla, and salt. Cover and cool 30 minutes
without stirring. Pour half the pineapple mixture into the baked pie
shell, spreading to cover bottom. Arrange cooked apples atop. Spoon
remaining mixture over apples. Cover and refrigerate till chilled.
Before serving, garnish center of pie with whipped cream and chopped
macadamia nuts, if desired.
This make-ahead fruit pie blends the flavor of pineapple juice with the
flavor of tart apples. Just before serving; decorate Pineapple-Glazed
Apple Pie with a wreath of whipped cream and a sprinkling of nuts, such
as macadamia nuts or toasted, sliced almonds.

Puppy Chow!
Chex " Muddy Buddies" Brand Snack

9 cups of your favorite Chex brand cereals (Corn, Rice and/ or Wheat)
1 cup semi-sweet chocolate chips
1/2 cup peanut butter
1 1/4 cup margarine or butter
1 teaspoon vanilla extract
1 1/2 cups powdered sugar

Microwave:
1. Pour cereals into large bowl; set aside
2. In 1-quart microwave safe bowl combine chocolate chips,
peanut butter and margarine. Microwave on HIGH 1 to 1 1/2 minutes or
until smooth, stirring after 1 minute. Stir in vanilla.
3. Pour chocolate mixture over cereals, stirring until all pieces are
evenly coated. Pour cereal mixture into large resealable plastic bag
with powdered sugar. Seal securely and shake until all pieces are well
coated. Sprad on waxed paper to cool.

Stovetop:
1. Pour cereals into large bowl; set aside
2. In small saucepan over low heat melt chocolate chips, peanut butter
and margarine until smooth, stirring often. Remove from heat; stir in
vanilla.
3. Continue with step 3 above.

NOTE: DO not use reduced-fat margarine or butter as it may cause the
chocolate mixture to clump and will not coat the cereal mixture evenly.

* Due to differences in microwave ovens, cooking time may need
adjustment. These directions were developed using 625 to 700 watt ovens.

Makes 9 cups

HOMOUS (Greek Dip)

4 cups cooked chickpeas (two 19oz cans, drained)
1/2 cup ground sesame (or sesame paste) or u can use tahini
1/3 cup hot water
1/3 cup extra virgin olive oil
4-6 cloves fresh garlic (or more, if you're like me)
2-4 tsp ground cumin
Juice of 1 or 2 lemons
Salt and freshly ground pepper, to taste

In your food processor, blend the chickpeas,tahini, hot water, olive oil and the juice of one lemon until smooth. Add the garlic and spices, and blend again, stopping to scrape down the sides occasionally. Taste and adjust the lemon juice amount, if needed. Add the salt and pepper, and blend again.

Serve with warm pita bread, cut up fresh veggies or crackers. Also great as a mayo substitute on sandwiches or burgers.

Variations
Sun-Dried Tomato: This one is soooooo good. Add 1/2 cup chopped sun dried tomatoes (preferably those that have been packed in oil) and process well to make it smooth. Very tangy.

Green: Add one bunch of fresh, chopped cilantro(stems removed) and 1/3 cup chopped, fresh dill(stems removed) to the recipe. Process until smooth.

Mexican: Add 1/2 cup hot salsa to the recipe. Omit water, or use 1/4 cup if needed, to blend.

Sweet and Sour: Add 1/2 cup drained sweet pickles to the recipe and process until smooth.


GREEK SALAD

Four tomatoes, sliced in segments
One sliced onion
1 sliced cucumber
Some olive oil
optional lemon or white vinergar
Sliced/chopped féta cheese (a white, salty cheese made with goats milk)
Salt, pepper and oregano seasoning

Mix the ingredients together and spread the oil over them (optional lemon or white vinergar. Sprinkle some salt, pepper and oregano.


COUNTRY STYLE PORK/BEEF/RIBS

------BBQ Sauce------
In sauce pan melt 2 heapin tbls margerine/butter
Add: 2c ketchup
1/4c worcestershire sauce
1/4c orange juice or lemon
2 heaping tbls brown sugar
1/2c chopped or dried onions
1 tbls garlic - finely chopped
heat n cook 10 mins on boil

------Meat------
In a pot with water, bring to boil
Simmer 30 to 45 mins
Put 1/2 BBQ saucce in baking dish
Add meat
Add rest of sauce
Bake in 350 degree oven for 45 to 60 mins until tender.
mmmmm mmmmm Good!!

NORTHWEST SALMON BURRITOS

2 cans Salmon
2 cups chunky Salsa
1 lg can diced green chilies
1 1/2 cups shredded Cheddar cheese
3/4 cups Monterey Jack Cheese divided
Juice of 1/2 lemon
1 tsp chili powder
8 - 10 Flour Tortillas
Drain salmon, reserving 4 tsp of liquid, flake
In large sauce pan heat salsa, green chilies, salmon juice and cheese til cheese melts
toss n mix well
place mixture in each tortillas and roll up
place in Large baking pan, top with cheese and bake at 350 for 45 min

Shrimp Pizza

one large Boboli Pizza crust
1 1/2 pound cooked salad shrimp
1 cup mayonaise
1/2 cup of mozzerlla cheese grated
1/2 cup of cheddar cheese grated
3 chopped green onions
5 Tbsp. Parmesan Cheese
4 Tbsp. Lemon juice
parsely


mix all together spoon onto pizza crust, top with parsely and bake til cheese melts and hot in 400 oven

Savory Pork Stew

1 TBS vegetable oil
1 1/2 pounds boneless pork cut into cubes
3/4 cup apple juice
1/4 tsp caraway seed
5 medium red potatoes, cut into chunks
2 cups coarsely chopped cabbage
4 carrots diagonally sliced
2 cans condensed cream of celery soup
2 cans milk

brown pork in hot oil
add juice, caraway, heat to boiling reduce heat to low, cover and simmer 20min stirring occasionally
add potatoes, cover cook 10 min
add cabbage and carrots cover and cook 15 min or until vegestables are tender
stir in soup and milk heat through, NOT boiling

APPLEBUTTER

6 Apples (or 8 if small)
1 tb Cinnamon
1/4 c +2 TB concentrated frozen -apple juice
1 c Water
1/8 ts Ground cloves
1/4 c Water
1 tb Cornstarch

1. Peel, core, and thinly slice apples. Put them in a saucepan with 1/4 cup of the water and 1/4 cup of the applejuice. Bring to a boil, then reduce heat and simmer uncovered for 1 hour. Mix cornstarch with the 2 Tb ofapplejuice. Stir into the mix, and stir until it thickens.

2. Put all ingredients in a blender and puree until smooth. Refrigerate.
Makes about 4 cups.
